Si hay una salsa que aporta un toque exquisito a las piezas de carne, es la salsa Café de París. Su origen se remonta a 1930, y a un restaurante situado en Ginebra, Suiza, llamado El Gallo de Oro. Allí su propietarios, el matrimonio Boubier, crearon la primera salsa de París para acompañar el filete de buey.  Estaba compuesta de especias, hierbas y otros ingredientes mezclados en una base de mantequilla. Los Boubier transmitieron la receta a su hija, quien a su vez se la transmitió a su marido, el propietario del restaurante suizo Café de París.  Fue precisamente el yerno de los Boubier, llamado Dumont, quien popularizó la salsa a partir de 1942, dándole el nombre de su restaurante.
